The Pacific Northwest may be the coffee capital of the U.S. so it’s no surprise that while fall is still several weeks away, pumpkin, pecan and other seasonal flavors have already returned to coffee shops across Oregon and Washington.

Five coffee chains with roots in the Pacific Northwest have now introduced their fall drink menus for 2026. The lineups include several returning favorites, along with new drinks inspired by banana bread, berries and apple cider.

Here is what Starbucks, Dutch Bros, Black Rock, The Human Bean, and Wake Up Coffee are offering this season.

Starbucks fall flavors return for 2026 on Aug. 25 – Starbucks

Starbucks brings back Pumpkin Spice Latte with several new drinks

Starbucks announced the return of its fall menu on Aug. 25.

The Seattle-based company also brought back its popular Pumpkin Spice Latte, Pumpkin Cream Cold Brew, Iced Pumpkin Cream Chai, and Pumpkin Spice Frappuccino.

Three new pumpkin drinks joined the menu this year:

  • Iced Pumpkin Cream Shaken Espresso: Blonde espresso shaken with brown sugar syrup and cinnamon, served with oat milk and pumpkin cream cold foam.
  • Iced Pumpkin Cream Matcha: Iced matcha topped with pumpkin cream cold foam.
  • Pumpkin Spice Chai: Spiced black tea, steamed milk and pumpkin sauce topped with pumpkin spice.

Starbucks also brought back three pecan-flavored drinks:

  • Pecan Cortado: Starbucks Blonde Espresso combined with pecan flavors and steamed whole milk.
  • Iced Pecan Crunch Latte: Starbucks signature espresso with nutty pecan flavor, brown-buttery notes and baking spices, served over ice.
  • Pecan Crunch Latte: A hot version made with Starbucks signature espresso, nutty pecan flavor, brown-buttery notes and baking spices.

Two new banana bread-inspired drinks offer another option for customers who want something other than pumpkin.

  • The Iced Banana Bread Latte combines Blonde espresso, banana syrup, milk and brown sugar cream cold foam.
  • The Iced Banana Bread Chai pairs chai with banana syrup, cold foam and cinnamon dolce topping.

Both banana bread drinks are expected to remain available beyond the fall season.

The company also introduced the Iced Chaider, which blends chai with strawberry acai flavors to create a drink inspired by spiced apple cider.

Starbucks opened its first store at Seattle’s Pike Place Market in 1971.

Dutch Bros Fall 2026 Flavors – Dutch Bros Coffee

Dutch Bros adds a new berry flavor to its fall menu

Dutch Bros released its fall menu on Aug. 21 with two returning flavors and one new addition.

  • Caramel Pumpkin Brûlée combines pumpkin and salted caramel with Soft Top, pumpkin drizzle and raw sugar sprinkles. Customers can order the flavor as a breve, latte, chai or Freeze.
  • The returning Cookie Butter flavor includes cookie butter syrup and drizzle, Soft Top and an additional swirl of cookie butter around the cup. It is available as a latte, chai or Freeze.
  • Autumn Berry is Dutch Bros’ newest fall flavor for customers looking for a fruitier seasonal option. The drink combines pomegranate, orange and peach flavors with a mixed berry fruit topping.

Autumn Berry can be ordered as an iced or blended Rebel energy drink or as a Myst Energy Refresher.

The three flavors are available at Dutch Bros locations while supplies last.

Dutch Bros began as a coffee pushcart in Grants Pass, Oregon, in 1992.

Human Bean 2026 fall flavors – The Human Bean

The Human Bean brings back three pumpkin drinks

The Human Bean was the first of the three chains to begin serving its fall menu, bringing back three pumpkin drinks on Aug. 5.

The seasonal lineup includes:

  • Pumpkin Snowy: Espresso, white chocolate and pumpkin topped with whipped cream and cinnamon sprinkles. It is available hot, iced or as a granita.
  • Pumpkin Java Chip: A blended drink made with Java Chips and pumpkin drizzle, topped with whipped cream.
  • Pumpkin Granita: A frozen espresso drink blended with pumpkin flavor and finished with pumpkin sauce around the cup.

The Human Bean opened its first drive-thru espresso stand in Ashland, Oregon, in 1998.

Black Rock Coffee 2026 fall flavors – Black Rock Coffee Bar

Black Rock Coffee Bar adds cookie butter to its pumpkin lineup

Black Rock Coffee Bar released its pumpkin menu on Aug. 13 with two returning drinks and one new addition.

  • Pumpkin Blondie: This drink combines espresso, white mocha and spiced pumpkin, while the returning
  • Pumpkin Spice Latte: This returning flavor features espresso, vanilla, pumpkin and milk.
  • Pumpkin Spice Cookie Latte with Cookie Butter Cold Foam: A brand-new drink that starts with Black Rock’s Pumpkin Spice Latte and adds cookie butter cold foam and a sprinkle of sugar.

All three drinks can be ordered hot, iced or blended.

Customers can also add cookie butter cold foam to any drink for a limited time. Pumpkin bread has returned as another seasonal menu item, although availability may vary by location.

The fall menu is available at more than 200 Black Rock locations while supplies last.

Black Rock Coffee Bar was founded in Beaverton, Oregon, in 2008.

Wake Up Call Coffee introduces six autumn-inspired drinks

Wake Up Call Coffee has rolled out six seasonal drinks featuring pumpkin, maple, apple, cranberry and other fall flavors.

The Spokane-area coffee chain’s fall menu includes:

  • Apple Pie Matcha: Japanese green tea with cream, green apple, shortbread and cinnamon, topped with whipped cream and cinnamon.
  • Maple Bar Latte: A breve latte flavored with maple and cookie butter, topped with cookie butter cold foam.
  • Pumpkin Cookie ’Chata Latte: A white coffee breve with cookie butter, pumpkin, chocolate macadamia and cinnamon.
  • Booberry MadHatter: An energy drink with white chocolate, blue raspberry and lime.
  • Cranberry Crisp MadHatter: An energy drink combining dragon fruit and cranberry.
  • Wicked Sour Apple MadHatter: A green apple energy drink with caramel drizzle, cold foam and lime crystals.

The Apple Pie Matcha, Maple Bar Latte and Pumpkin Cookie ’Chata Latte are available hot, iced or blended. The three MadHatter energy drinks can be ordered iced, as a smoothie or as a slushy.

Wake Up Call Coffee opened its first location in Spokane Valley in 2004.

When are the fall drinks available?

Fall drinks are now available at these Pacific Northwest Coffee shop. Availability may vary by location, and some seasonal drinks will only be offered while supplies last.
